Cabeças do Reguengo Respiro Clarete is an unconventional and exciting wine that bridges the gap between white and red. Crafted from a blend of white and red grapes harvested from four centenary vineyards—Cabeças de Baixo, Ribeiro de Seda, Salão Frio, and Marrada Alta—this wine offers an exotic mix of aromas and flavors.
The vinification process involves hand-harvesting the grapes, partially fermenting them as whole clusters and partially crushed and destemmed, in a cement tank. Natural fermentation with wild yeasts is followed by an extended 9-week maceration, which imparts light tannins and a deeper flavor profile. The wine is then aged for 8 months in old 225-liter French oak barrels, rounding out its texture and adding complexity.
With a bright acidity of 4.6 g/L and a modest alcohol level of 11.7%, Respiro Clarete is designed to be enjoyed fresh. Its unique profile makes it ideal for pairing with tapas, grilled vegetables, or spicy dishes. Limited to 3,237 bottles, this gastronomic wine is a true delight for adventurous palates.
