Cabeças do Reguengo Respiro Lagar Branco is a bold exploration of ancient winemaking methods and natural viticulture. Sourced from two centenary vineyards, Cabeças and Ribeiro de Seda, this wine reflects the rich heritage and unique microclimate of the Serra de São Mamede region.
The vinification process combines foot-crushing the grapes in 1,000-liter lagares and fermenting 850 kg of destemmed grapes in a clay talha without sulfites. The wine fermented naturally with wild yeasts, followed by an 8-month maturation. Grapes from the lagares were transferred to barrels at a density of 1005 for barrel aging on lees, while the talha wine underwent prolonged maceration. Malolactic fermentation rounded out its texture before bottling without filtration or fining.
With an alcohol content of 11% and bright acidity (6.0 g/L), Respiro Lagar Branco pairs beautifully with seafood, creamy dishes, or soft cheeses. Limited to 2,084 bottles, this is an exceptional choice for fans of natural, small-production wines.
