O Branco is the latest expression of Pablo Soldavini’s mission to craft wines that speak authentically of their origin. Though best known for his work with red wines in Ribeira Sacra, Pablo extends his expertise to white wines with this outstanding Albariño from Salnés, a region synonymous with the variety. The grapes are sourced from ungrafted, centenary vines, farmed organically to preserve biodiversity and terroir character.
Fermentation occurs spontaneously in 750L barrels, followed by gentle bâtonnage over 12 months to develop depth and texture. A unique portion of the production is submerged 19 meters below the surface of the Ría de Arousa in metal cages, allowing the wine to mature in an environment with stable temperature, humidity, and pressure. This process enhances the wine’s complexity while maintaining its fresh and saline-driven profile.
On the nose, O Branco delivers vibrant aromas of citrus zest, green apple, and white flowers, with subtle saline and mineral undertones. The palate is structured yet elegant, with a lively acidity that carries flavors of peach, almond, and a distinctive maritime freshness. A wine of extraordinary finesse, it pairs beautifully with seafood, shellfish, rice dishes, and soft cheeses. Though already drinking beautifully, it has the potential to evolve gracefully with age.

Matassa Olla Blanc 2023 is a lively, skin-contact white wine from Domaine Matassa, blending Muscat Petit Grains and Macabeu from organically and biodynamically farmed vineyards in Roussillon. Fermented on skins for 10 to 12 days and aged on lees in concrete tanks, this unfiltered and unsulfured wine bursts with tropical and stone fruit aromas, herbal notes, and a fresh, zesty finish. A low-alcohol (10.5%) natural wine, perfect for warm-weather sipping and pairing with seafood, aperitifs, and light dishes. |
