La Santa de Úrsula 2022 is a striking example of the unique viticulture of the Canary Islands. Named after the village where its grapes are grown, this wine is sourced from three distinct high-altitude parcels (350–650m) in La Corujera, Tacoronte-Acentejo—Tenerife’s largest and most diverse wine region. The ungrafted, centenary vines thrive in organically farmed volcanic soils, benefiting from cooling Atlantic winds and minimal human intervention.

The grapes are manually harvested and vinified separately using indigenous yeasts. Approximately 20% of the fruit undergoes carbonic maceration, while the rest is fermented with whole clusters in open-top vessels, enhancing aromatic intensity and freshness. Post-fermentation, the wine is blended and aged for eight months on fine lees in neutral 228L French oak barrels, with malolactic fermentation occurring naturally. Bottled unfined and unfiltered, with only minimal sulfur added, La Santa de Úrsula is a pure expression of terroir.

On the nose, this wine bursts with red currant, cranberry, and cherry aromas, layered with subtle mineral undertones and herbal notes. The palate is energetic and elegant, featuring fine-grained tannins, bright acidity, and a long, spice-tinged finish. Its balance of freshness and structure makes it an ideal pairing for game meats, chorizo, or aged cheeses. Serve at 16ºC for optimal enjoyment.
